Description
Sanma is so synonymous with autumn that the kanji for its name translates literally to autumn sword fish.
In English, it’s known as Pacific saury or Mackerel Pike and is widely found in the North Pacific Ocean.
Though the fishing season for Sanma starts in July, they are mostly caught in autumn due to it being spawning season. The later that sanma are caught in autumn, the more fat and flavor each fish will have.
Sanma is fatty and has a rich and unique flavour. Some compare the fattiness of sanma to mackerel, but the flavour is lighter and smoother than mackerel.

Leave them in their shells, place them in a single layer on a plate or tray, cover tightly with plastic wrap and store in the coldest part of the fridge.
Ise Ebi should not come into direct contact with ice (fresh water) and should not be submerged in water.
Wine Pairing
Sanma is an oily fish and needs whites with crisp acidity to counteract this. Wines from the Loire. Dry rosé work well too.
