Madai, the king of fish is a symbol of celebration because of its red color.

Spring and autumn as high seasons for wild madai – Mostly fished in Kyushu and the western part of the country- but is available in the market throughout the year.

It is one of the indispensable ingredients in Japanese cuisine and is well-known for being a typical sushi topping as well.

With its simple flavor, madai complements all kinds of cuisine. For its fattiness, texture and sweetness, and since its flavor can be enjoyed cooked, hold the potential for use in wide-ranging dishes.

Leave them in their shells, place them in a single layer on a plate or tray, cover tightly with plastic wrap and store in the coldest part of the fridge.

Ise Ebi should not come into direct contact with ice (fresh water) and should not be submerged in water.
