Description
Buri is what the Japanese call a mature Japanese Amberjack, or Yellowtail. It is used as a collective term for both natural and farmed fish
The buri has a translucent, pinkish white flesh with a high fat content and oily texture, a great option for sashimi. Belly cut is the the most prized portion of the fish
Buri’s flavor of grease is exceptional and can be enjoyed even with simple seasoning.
Sashimi, sushi and carpaccio are delicious, but heating improves umami of the fat. And can be enjoyed in a broad range of recipes such as salt-grilling, teriyaki, miso-marinade and shabu-shabu.

Thawing Instructions
The best way to thaw our seafood is to remove the product from the original packaging, place it in a plastic bag, and allow it to thaw in the refrigerator for about 6 hours. If you require faster thawing, we recommend placing the product into a non-vacuum sealed bag and placing it in cool water for around thirty minutes to an hour.
Storage
Seafood ordered from Fishmonger should be kept frozen until ready for preparation. Items can be stored frozen for up to 12 months, but are best if consumed within 6 months of purchase.
Frozen fish placed in a refrigerator, at a temperature of 4℃ or below, must be used within two days after purchase.

Champagne/sparkling rosé, light rosé, dry Riesling (off-dry for nigiri).
