Instead of simply dipping the sashimi with soy sauce, you can also try to eat your sashimi with these refreshing fishmonger dressings!
What you’ll need
- 2 tbsp. Soy Sauce
- 1 tsp. Sesame Oil
- 1 tsp. rice wine vinegar
- 1 tsp. mirin
- 1 mandarin, zest and juice
- 1 lemon, zest and juice
How to make it
- Place all ingredient into your mortar, pestle and mix to combine tasting as you go to check balance.
- Pour over dressing and top with with spring onions and sesame seeds.
What you’ll need
- 150ml grapeseed oil
- 55ml soy sauce
- 100ml yuzu juice
- Zest of yuzu
- 80ml garlic puree
- 20g black pepper
- 60g white miso
- 15ml mirin
- 15ml sake
How to make it
- Place all ingredient into a mortar, pestle and mix to combine tasting as you go to check balance.
- Dribble a little of the dressing around the plate.
What you’ll need
- 100 ml light soy sauce
- 1 tbsp roasted sesame oil
- 3 tsp rice vinegar
- 1 tsp finely grated ginger
How to make it
- Whisk ingredients in a bowl to combine.
- Drizzle with dressing, scatter with shiso leaves and sesame seeds and serve.
What you’ll need
- 3 tsp light soy sauce
- 2 tsp grapeseed oil or peanut oil
- 1 tsp caster sugar
- 1 tsp dried chilli flakes
- 1/2 tsp sesame oil
- Juice of 1 lime
How to make it
- Combine all the ingredients in a bowl and whisk to combine.
- Drizzle with dressing and garnish with spring onion to serve.
